Androulla's Cheesecake Yum

This recipe was requested by my friend , so enjoy!!!!

  • Ingredients:
  • 250g plain sweet biscuits
  • 125g butter melted
  • Icing sugar to dust

Filling

2 x 250g cream cheese at room temperature
3/4 caster sugar
2 tsp vanilla essence
1/2 lemon , rind finely grated, juiced
4 eggs separated
1/2 cup thickened cream
  1. Preheat oven 180C. Brush a 20cm pan with melted butter.
  2. Process biscuits and add butter until well combined. Press over base and sides and place in fridge while making the filling.
  3. Beat cream cheese, sugar and vanilla essene, add the lemon rind, lemon juice, egg yolks and cream beat until light and fluffy.
  4. Whisk the egg whites and fold in until combined.
  5. Bake for 40-45 minutes until just set in the centre.Cool in oven for 1 hour. Cover cheesecake loosely with plastic wrap and place in fridge overnight. Dust with icing sugar to serve.
