Filling
2 x 250g cream cheese at room temperature
3/4 caster sugar
2 tsp vanilla essence
1/2 lemon , rind finely grated, juiced
4 eggs separated
1/2 cup thickened cream
- Preheat oven 180C. Brush a 20cm pan with melted butter.
- Process biscuits and add butter until well combined. Press over base and sides and place in fridge while making the filling.
- Beat cream cheese, sugar and vanilla essene, add the lemon rind, lemon juice, egg yolks and cream beat until light and fluffy.
- Whisk the egg whites and fold in until combined.
- Bake for 40-45 minutes until just set in the centre.Cool in oven for 1 hour. Cover cheesecake loosely with plastic wrap and place in fridge overnight. Dust with icing sugar to serve.
