Technology vs Trendy Grandmother

Technology and I were once really good friends. Electricity, washing machines, refridgerators, airplanes, chordless phones and even fax machines were OK with me. But PC's and mobile phones seem to have a life of their own. I'm OK with the basics of both but don't ask me to send you an SMS or tell you who's call I missed earlier :-) (and it's not my fault that I get a lot of missed calls while shopping).

Androulla's Cheesecake Yum

This recipe was requested by my friend , so enjoy!!!!

• Ingredients:
• 250g plain sweet biscuits
• 125g butter melted
• Icing sugar to dust

Filling

2 x 250g cream cheese at room temperature
3/4 caster sugar
2 tsp vanilla essence
1/2 lemon , rind finely grated, juiced
4 eggs separated
1/2 cup thickened cream

1. Preheat oven 180C. Brush a 20cm pan with melted butter.
2. Process biscuits and add butter until well combined. Press over base and sides and place in fridge while making the filling.
3. Beat cream cheese, sugar and vanilla essene, add the lemon rind, lemon juice, egg yolks and cream beat until light and fluffy.
4. Whisk the egg whites and fold in until combined.
5. Bake for 40-45 minutes until just set in the centre.Cool in oven for 1 hour. Cover cheesecake loosely with plastic wrap and place in fridge overnight. Dust with icing sugar to serve.

busy weekend

I apologise for not having time for a recipe today, will have to wait till next week.
I am working all day Saturday and partying all night. On Sunday its church time in the morning , coffee with friends after, more coffee and cake with another friend later on and ....two visitors coming for more coffee and cake late afternoon......so I guess I won't show up for work on Monday. Thank you for your understanding !!!!

Precious life

Hello everyone

so nice to be back and celebrating the precious little addition in my family. This is an exciting phase in my life.
In the next few weeks we will be cooking exciting food ( greek plus) so stay tuned.
